Monsoon Coast Vegetables
Ingredients
- ⅓ cup olive oil
- 3 cups Mixed Vegetables
- salt to taste
Your favourite Monsoon Coast Spice
- 1-2 tsp Monsoon Coast Adobo Seco or
- 1-2 tsp Durban Curry or
- 1-2 tsp Ethiopian Berbere or
- 1-2 tsp Jamaican Jerk Rub or
- 1-2 tsp Kowloon Curry or
- 1-2 tsp Mahaviras Feast or
- 1-2 tsp Moghul Curry or
- 1-2 tsp Monsoon Balti or
- 1-2 tsp Monsoon Tandoori or
- 1-2 tsp Moroccan La Kama or
- 1-2 tsp Ras el Hanout or
- 1-2 tsp Rose Harissa or
- 1-2 tsp Tobago Habanero Curry or
- 1-2 tsp Tunisian Harissa or
- 1-2 tsp BBQ and Roast Rub
Instructions
- Place vegetables in a bowl where you can toss them with the remaining ingredients. Mix very well.⅓ cup olive oil, 3 cups Mixed Vegetables, salt
- Place vegetables on a baking sheet and roast at 375 °F until done. Flip the vegetables if needed during the roasting process.
