Monsoon Coast Vegetables

A quick and easy way to transform roasted vegetables. It makes for a colourful and healthy side.

Ingredients
  

  • cup olive oil
  • 3 cups Mixed Vegetables
  • salt to taste

Your favourite Monsoon Coast Spice

Instructions
 

  • Place vegetables in a bowl where you can toss them with the remaining ingredients. Mix very well.
    ⅓ cup olive oil, 3 cups Mixed Vegetables, salt
  • Place vegetables on a baking sheet and roast at 375 °F until done. Flip the vegetables if needed during the roasting process.

Notes

Serves 2-3 as a side.
