Coronation Chicken

This recipe was originally created for the Coronation of Queen Elizabeth II. It is a celebratory chicken salad elevated with golden curry and mango chutney, so it is great with our Moghul, Kowloon or Tobago Habanero Curry (if you like it hot).  Enjoy on its own over a green salad, or as a filling in a sandwich.

Ingredients
  

  • 1-1.5 lb boneless skinless chicken breasts fully cooked (poached or pulled from a rotisserie chicken)
  • 1/2 cup Yoghurt
  • 1/2 cup mayonnaise
  • 1-2 tbsp Moghul, Kowloon or Tobago Habanero (hot) Curry
  • 1/4 cup mango chutney
  • 1/2 cup pecans or cashews chopped
  • 1/2 cup celery chopped
  • 2 tbsp fresh parsley chopped
  • Salt and pepper to taste
  • Squeeze of lemon

Instructions
 

  • Mix everything together. Chill at least an hour for flavours to mix well. Serve and enjoy!
