An exciting and flavourful chicken dish that combines the bold, earthy flavours of zaatar spice with a zesty and spicy tang. In this recipe, tender chicken pieces are marinated in a vibrant mixture of zaatar, tangy sumac, and a mild warmth of Aleppo pepper.

Zaatar, known for its aromatic blend of herbs, sesame seeds, and sumac, infuses the chicken with a unique Mediterranean essence. The tangy element comes from sumac, which adds brightness and a refreshing kick, while the spiciness, delivered by Aleppo pepper, provides an exciting and warm dimension while not being too spicy.

Marinated chicken is cooked to perfection, resulting in a mouthwatering fusion of flavours and textures.

Tangy Spicy Zaatar Chicken

One of our favourite and easy chicken preparations. Zaatar and lemon shine together alongside garlic and olive oil for a true Levantine flavour.

Ingredients
  

  • 8 pieces Chicken Thighs
  • 2 tbsp Zaatar
  • 1 tbsp Sumac
  • 1-2 tsp Aleppo Pepper
  • Salt & Pepper
  • 3 cloves Garlic crushed
  • ¼ cup olive oil

Instructions
 

  • At least 6 hours ahead of cooking mix marinade ingredients. Add chicken and mix well, including under the skin.
    8 pieces Chicken Thighs, 2 tbsp Zaatar, 1 tbsp Sumac, 1-2 tsp Aleppo Pepper, Salt & Pepper, 3 cloves Garlic, ¼ cup olive oil
  • Heat oven to 400℉.
  • Roast chicken for 30 minutes.
  • Remove from oven, cover and let rest.
  • Serve with Monsoon Coast Potatoes and Moroccan Glazed Carrots.
