An exciting and flavourful chicken dish that combines the bold, earthy flavours of zaatar spice with a bit of zesty heat. In this recipe, chicken pieces are marinated in a mixture of zaatar, tangy sumac, and the warm heat of Aleppo pepper.

Tangy Spicy Zaatar Chicken

One of our favourite and easy chicken preparations. Zaatar and sumac shine together alongside Aleppo pepper, garlic and olive oil for a true Levantine flavour.

Ingredients
  

  • 8 pieces Chicken Thighs
  • 2 tbsp Zaatar
  • 1 tbsp Sumac
  • 1-2 tsp Aleppo Pepper
  • Salt & Pepper
  • 3 cloves Garlic crushed
  • ¼ cup olive oil

Instructions
 

  • At least 6 hours ahead of cooking mix marinade ingredients. Add chicken and mix well, including under the skin.
    8 pieces Chicken Thighs, 2 tbsp Zaatar, 1 tbsp Sumac, 1-2 tsp Aleppo Pepper, Salt & Pepper, 3 cloves Garlic, ¼ cup olive oil
  • Heat oven to 400℉.
  • Roast chicken for 30 minutes.
  • Remove from oven, cover and let rest.
  • Serve with Monsoon Coast Potatoes and Moroccan Glazed Carrots.
