Tangy Spicy Zaatar Chicken
One of our favourite and easy chicken preparations. Zaatar and sumac shine together alongside Aleppo pepper, garlic and olive oil for a true Levantine flavour.

- 8 pieces Chicken Thighs
- 2 tbsp Zaatar
- 1 tbsp Sumac
- 1-2 tsp Aleppo Pepper
- Salt & Pepper
- 3 cloves Garlic crushed
- ¼ cup olive oil
At least 6 hours ahead of cooking mix marinade ingredients. Add chicken and mix well, including under the skin.
8 pieces Chicken Thighs, 2 tbsp Zaatar, 1 tbsp Sumac, 1-2 tsp Aleppo Pepper, Salt & Pepper, 3 cloves Garlic, ¼ cup olive oil
Heat oven to 400℉.
Roast chicken for 30 minutes.
Remove from oven, cover and let rest.
Serve with Monsoon Coast Potatoes and Moroccan Glazed Carrots.
