Moroccan Orzo Pilaf

Ingredients
  

  • 1 cup Orzo
  • 1/3 cup peeled slivered almonds
  • 1 tbsp olive oil
  • 1/2 Onion chopped
  • 1/4 cup red pepper chopped
  • 1/4 cup green pepper chopped
  • 1-2 tsp Ras el Hanout
  • Salt to taste
  • Fresh parsley to garnish

Instructions
 

  • Bring pot of water to a boil. Add 1/2 tsp salt and orzo and cook until al dente. Drain and set aside.
    1 cup Orzo, Salt to taste
  • Heat a large frying pan over medium heat. Add almonds; shake pan and dry roast the almonds until they are lightly browned. Remove nuts from the pan.
    1/3 cup peeled slivered almonds
  • Add olive oil to the pan. Add onion and sauté 2-3 minutes.
    1 tbsp olive oil, 1/2 Onion
  • Add peppers, Ras el Hanout and salt. Cook another minute
    1/4 cup red pepper, 1/4 cup green pepper, 1-2 tsp Ras el Hanout
  • Add drained orzo and stir gently until well combined and heated through.
  • Garnish with parsley and toasted almonds
    Fresh parsley to garnish
