A staple in south Indian and Sri Lankan kitchens, fresh or dried curry leaves are traditionally used at the start of cooking, briefly fried in oil to release their essential oils. Their distinct taste then infuses the entire dish—an irreplaceable building block . Whether you’re preparing a dal, coconut-based fish curry, or South Indian sambar, these dried curry leaves are essential to achieve authentic flavour.

Beyond their culinary importance, dried curry leaves are celebrated for their health-enhancing properties. He then carefully prepares them for drying using a gentle low-temperature low-light method that locks in their fragrance and integrity. Once dried, we use these high-quality curry leaves proudly in some one of our most popular blends like Moghul Curry, Monsoon Balti or the lovely Kerala Chaunk.
