Moroccan Orzo Pilaf
Ingredients
- 1 cup Orzo
- 1/3 cup peeled slivered almonds
- 1 tbsp olive oil
- 1/2 Onion chopped
- 1/4 cup red pepper chopped
- 1/4 cup green pepper chopped
- 1-2 tsp Ras el Hanout
- Salt to taste
- Fresh parsley to garnish
Instructions
- Bring pot of water to a boil. Add 1/2 tsp salt and orzo and cook until al dente. Drain and set aside.1 cup Orzo, Salt to taste
- Heat a large frying pan over medium heat. Add almonds; shake pan and dry roast the almonds until they are lightly browned. Remove nuts from the pan.1/3 cup peeled slivered almonds
- Add olive oil to the pan. Add onion and sauté 2-3 minutes.1 tbsp olive oil, 1/2 Onion
- Add peppers, Ras el Hanout and salt. Cook another minute1/4 cup red pepper, 1/4 cup green pepper, 1-2 tsp Ras el Hanout
- Add drained orzo and stir gently until well combined and heated through.
- Garnish with parsley and toasted almondsFresh parsley to garnish
