Jasmine Tea-Poached Pears with Ginger and Lime

A great surprising twist on a classic pear dessert.

Ingredients
  

  • 3 cups water
  • 5 tsp Jasmine Green Tea
  • 1 small piece of ginger peeled and thinly sliced
  • 1/4 cup White Sugar
  • Juice and zest of one lime
  • 2 perfect pears peeled and halved
  • Vanilla ice cream to serve
  • Black sesame seeds to garnish

Instructions
 

  • Bring water to a boil. Add Jasmine Green Tea, cover and remove from heat. Let steep 3-5 minutes.
    3 cups water, 5 tsp Jasmine Green Tea
  • Strain brewed tea into a small saucepan. Add ginger, sugar and lime zest (hold the juice). Stir well until sugar dissolves.
    1 small piece of ginger, 1/4 cup White Sugar, Juice and zest of one lime
  • Cover and bring to a boil. Lower heat and simmer for 5 minutes.
  • Arrange pear halves cut side down in the syrup, all touching the bottom of the pan. Poach for 3-5 minutes or until desired tenderness. Spoon frequently with poaching liquid during cooking.

  • Take the pears out carefully. Strain the liquid, return to pot and further reduce to a thick syrup. Add lime juice and take off heat.
  • Place 1 or 2 pear halves in a bowl with a scoop of vanilla ice cream, spoon Jasmine green tea syrup on top.
    Vanilla ice cream to serve
  • Sprinkle with black sesame seeds.
    Black sesame seeds to garnish
