Ingredients

Zucchini
Sliced or in half-moons
½
tbsp
Caraway Seed
½
tbsp
cumin seeds
1
tbsp
lemon juice
1
tbsp
olive oil
½
tbsp
Tunisian Harissa
or
½
tbsp
Rose Harissa
1
garlic cloves
crushed
Salt to taste
(Tunisian Harissa has some salt)
For Garnish
Cilantro
chopped
Instructions
In a pan over medium heat, sauté zucchini slowly until tender.
1 lbs Zucchini
Roast the cumin and caraway seeds in a dry pan for 1-2 minutes.
½ tbsp Caraway Seed,
½ tbsp cumin seeds
Mix all ingredients and enjoy at room temperature or slightly cold.
1 tbsp lemon juice,
1 tbsp olive oil,
½ tbsp Tunisian Harissa,
½ tbsp Rose Harissa,
1 garlic cloves,
Salt to taste,
Cilantro
Keeps refrigerated for a few days.
