BBQ Chicken Kebab

Enjoy these delicious kebabs with warm pitas and raita or just on their own with your favourite side dishes. Tender and juicy because we use chicken thighs and just the right spices! 

Ingredients:
4 or 5 boneless, skinless chicken thighs, cut into 1 1/2" pieces 
1/2 c Balkan style yogurt 
1-2 tbsp BBQ Rub
Zest of 1/2 lemon 
Juice of 1/2 lemon 
2 cloves garlic, crushed 
Salt to taste 

1 large onion cut into 1 1/2" pieces 
1 large red or yellow pepper cut into 1 1/2" pieces 

Method: 
Prepare the chicken. Mix the marinade ingredients together until combined. Add chicken stir to evenly coat then let rest in the fridge for 2 hours. 

Put 6 wood skewers in water to soak. Prep the onions and peppers. 

When ready to assemble, skewer pieces of chicken, onion and pepper on each skewer. Preheat BBQ. Grill kebabs over medium-high heat about 2-3 minutes per side until cooked (internal temperature of 170F). Enjoy with a fresh summer salad, couscous and your favourite BC wine!
