Mahavira's Veggies

A quick and easy way to transform ho-hum stir-fried vegetables. It makes for a colourful and healthy side. Include any other veggies you happen to have on hand... I added some baby corn, mushrooms and baby bok choy in this version in the photo below.
1/2 tbsp. olive oil
1/2 tbsp. butter
1 small zucchini
1/2 red pepper
2 cloves garlic
1/2 tsp Mahavira's Feast
Salt to taste
Slice zucchini in half, lengthwise then cut into 1/4" thick slices. Cut red pepper into 1/2" cubes. Slice garlic into slivers.
Heat pan over medium-high. Add olive oil and butter. When butter stops foaming add the veggies and garlic. Sprinkle with Mahavira's Feast and salt to taste. Sauté until just tender.
