Ingredients:
      1 28 oz can diced tomatoes (drained) (use fresh if available)
      2 tbsp packed brown sugar
      1 box (42 grams) raisins (small handful)
      1 tbsp black mustard seed (optional)
      light oil
      2 tsp Punjabi Garam Masala
      1 bunch cilantro chopped fine
      salt to taste

Method:
Heat a small amount of oil in frying pan along with black mustard seed.
Once the seed starts to pop, add the drained, chopped tomatoes and cook
over medium heat until sauce is rendered down somewhat, but still maintains the individual chunks of tomato. Add raisins and brown sugar as the cooking proceeds.
Once rendered, stir in thePunjabi Garam Masala, cilantro and salt and remove from heat. Cool and serve as a side dish with Indian meals or as an antipasto.
