Bhajis are quick and simple vegetable dishes which provide a mildly spiced foray into Indian cuisine.
Ingredients:
2 tbsp. light oil
1 tsp. cumin seed
1 tsp black mustard seed
1 large onion, chopped
3 cups of chopped green beans
1/4 cup dried grated coconut
Cashew nuts ( small handful )
1 good sized sweet pepper, sliced(red or yellow is good for color contrast)
2 tbsp Punjabi Garam Masala
1/4 cup water or stock
salt to taste
Method: Cook the cumin and black mustard seeds in the oil at a medium high heat until the seeds crackle. Add the onion and sauté until translucent. Add chopped green beans, sweet pepper, coconut and a small palm full of whole cashews, with salt to taste. Add a quarter cup of water, cover and cook until tender, stirring in the Punjabi Garam Masala to coat the vegetables, a few minutes before they are done. You can adjust the spice levels to your personal taste, and if you like it hot, dont hesitate to add chilies and ginger in the beginning. Serve with rice or as a side
dish. Make up your own Bhajis using your favorite vegetables.
