Chai Poached Pears

Ralph Waldo Emerson said that "There are only ten minutes in the life of a pear when it is perfect to eat." If you are lucky enough to come across some pears in that precious time-frame, here is a way to prepare them that will knock your socks off. Try using Salt Spring Vineyards Blackberry Port!

Ingredients:
2 tsp Railway Chai
1 cup Port (or Salt Spring Vineyards Blackberry Port)
5 tsp honey
2 perfect pears, peeled and halved
Good vanilla ice cream
 
Method:
Crush the Railway Chai spices slightly in a mortar and pestle. Put port and Chai spices into a small sauce pan bring to boil, turn down the heat, cover and simmer about 5 minutes until reduced by half. Strain out the Chai spices.  Return port to sauce pan, add the honey and stir. Add the pears and poach for 3-4 minutes.

When done, place pears in a bowl with a scoop of vanilla ice cream, spoon port on top.
