A terrific salad for pot-lucks or anytime. Thanks Cam! Add whatever other ingredients you want like broccoli, fresh snap peas, a bit of purple cabbage or chopped kale.
2 tbsp mayonnaise
3 heaping tbsp whole yoghurt
Juice of 1/2 lemon
2 tsp brown sugar
1 tsp Moghul Curry
1/2 small head green or savoy cabbage
1/4 cup raisins
In a small bowl whisk together the first six ingredients until well combined. Taste and adjust seasoning.
Use a mandolin or finely chop cabbage. Grate carrots (or cut on a mandolin). Toss together with raisins. Add dressing to coat and toss again until well mixed. Let rest for 10-15 minutes before serving to let flavours combine.
