Pungent sulfur smelling asafoetida or hing is often called for in Indian and vegetarian cooking. It has anti-flatulent properties and can aid digestion. While a little goes a long way, the strong aroma mellows with cooking and lends an onion/garlic/black truffle flavour to dishes. It is a good substitute for people who cannot eat onion or garlic. The strong smelling resin is combined with rice and wheat flour, gum Arabic and corn oil. This product contains gluten.
